What is chaga?

A wild mushroom that grows on birch

Chaga grows slowly on birch trees in cold northern forests. It looks more like a lump of charcoal than a mushroom, with a cracked black crust and a rusty orange center, and it can take years to reach harvest size.

Wild, not lab grown

The real chaga that grows on living birch, not mycelium grown on grain.

What's in a cup of chaga

Chaga is naturally rich in polyphenols, the same family of plant compounds found in berries, green tea, and dark chocolate, and known for their antioxidant properties.

It also contains melanin, which gives the outer crust its deep black color and chaga tea its dark, coffee like look. Add to that natural polysaccharides, including beta glucans, and betulin, a compound chaga draws from the birch it grows on. All of it comes from the mushroom itself. Nothing is added.

Wild, not farmed

The real thing, straight from the birch

A lot of what's sold as chaga today is actually mycelium, the root like part of the fungus, grown in a lab on rice or oats. The finished product can end up being mostly grain.

Ours is the wild chaga itself, hand harvested from birch trees in northern forests, dried, and stone ground into a fine powder. One ingredient, and nothing else goes in the bag.

Across northern Europe and Siberia, chaga has been brewed into a dark, earthy tea for generations. Our powder keeps that tradition simple: stir it into coffee, steep it like tea, or blend it into whatever you're already making.

How to use it

Three easy ways

  1. 1
    In your coffee

Stir about 1/2 teaspoon into a cup of coffee for an earthy, rounded depth. It pairs well with both of our roasts.

  2. 2
    As a quick tea

Steep 1 teaspoon in a cup of hot water for 5 to 10 minutes. Strain through a fine filter, or let it settle and sip.

  3. 3
    For a stronger brew

Simmer 1 tablespoon in 4 cups of water for 20 to 30 minutes, then strain. Add maple syrup, honey, or milk if you like.

Powder or pieces?

Which chaga is right for you?

Same wild chaga, two ways to enjoy it. Powder is quick and easy. Pieces are for a slow simmered pot of tea.

Questions

Good to know

What does chaga taste like?

Earthy and smooth, with a light woody note and a subtle vanilla sweetness. It isn't bitter like coffee, and the powder makes a milder cup than a long simmered pot of chaga pieces.

Does chaga have caffeine?

No. Chaga is naturally caffeine free, so you can enjoy it any time of day.

Is this the same as mushroom coffee?

Not quite. Many mushroom coffees blend a small amount of mushroom extract or grain grown mycelium into instant coffee. This is 100% wild chaga, so you decide how much goes into your cup and what you pair it with.

Will it dissolve completely?

It's a fine ground powder, not an extract, so a little will settle at the bottom of your cup. Give it a stir, or pour through a fine filter if you prefer a smoother cup.

How should I store it?

Keep the bag sealed and store it somewhere cool and dry, away from moisture.

Is chaga right for everyone?

Chaga is a food, not a medicine. It's naturally high in oxalates and may interact with some medications, including blood thinners and diabetes medications. If you're pregnant, nursing, taking medication, or managing a health condition, check with your doctor before adding it to your routine.
